Johnny Cake Cookies

These were a happy mistake. I realized as I was creaming together the shortening and sugar that I didn’t have eggs, so I ran out to the store and got some. And then I proceeded to forget to add them to the batter! Bake them for 15 minutes for a chewy cookie, and 20 minutes for a crunchy one.

Johnny Cake Cookies*

2/3 cups shortening or butter
2/3 cup sugar
6 tablespoons honey

1 1/3 cup all purpose flour
2/3 cups corn flour (corn meal might be okay, but the finer ground the better)
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt (a medium grain works well)
sugar for rolling

Preheat the over to 350°F and grease cookie sheets.

In a large bowl, cream together the shortening, sugar, and honey.

In a medium bowl mix together the flours, baking soda and powder, and salt. Add the dry mixture to the shortening mixture a half at a time, blending well between each.

Roll the dough into 1 inch balls, and coat in sugar.

Bake for 15-20 minutes and remove to cooling rack.

*Johnny Cakes are actually a kind of cornmeal pancake, so the name takes a bit of artistic license.

Unlike their namesakes, these cookies will travel well.
